GMO vs. Non-GMO: What the Science Actually Says
Few topics in the grocery aisle spark as much confusion as GMOs. One camp says they're perfectly safe and the debate is settled. Another says they're worth avoiding on principle. Both are talking past each other, because "is it safe to eat" and "do I want to support how it's grown" are two different questions.
Mainstream scientific bodies, including the National Academies of Sciences and the World Health Organization, have reviewed decades of research and found no evidence that approved GMO foods are less safe to eat than their conventional counterparts. That's a real, well-documented consensus. At the same time, there are legitimate, separate concerns, mainly around herbicide use patterns, cross-contamination of non-GMO crops, and how much control a handful of seed companies have over the food supply. Both things can be true at once.
What does GMO actually mean?
GMO stands for genetically modified organism. In food, it almost always refers to crops whose DNA has been altered in a lab, usually to resist a specific herbicide (like glyphosate, the active ingredient in Roundup) or to produce their own resistance to certain insects. This is different from older plant breeding techniques like cross-pollination or hybridization, which also change a plant's genetics but through selective breeding rather than direct gene editing.
In the United States, genetically engineered crops are officially called "bioengineered" foods under a 2016 federal law, and since January 1, 2022, manufacturers have been required to disclose bioengineered ingredients on packaging, usually with a small green "Bioengineered" symbol or a QR code linking to more information, according to the National Agricultural Law Center.
Is GMO food safe to eat?
According to the FDA, GMO foods must meet the same safety standards as any other food sold in the US, and the agency states that GMO foods are as safe to eat as their non-GMO counterparts, per its Agricultural Biotechnology program. The most comprehensive independent review came from the National Academies of Sciences, Engineering, and Medicine in 2016, which looked at more than 900 studies spanning over 20 years and found no substantiated evidence that GMO foods cause cancer, allergies, or other chronic health problems compared to non-GMO foods, as summarized by a peer-reviewed analysis on PubMed.
That committee also concluded there was "no justification for the labeling of GM foods for safety reasons," since it found no identifiable safety concerns unique to genetic engineering as a process.
So why do people still avoid GMOs?
Safety isn't the only reason people choose non-GMO. The concerns that hold up best under scrutiny are about how GMO crops are farmed, not what happens when you eat them.
- Herbicide use patterns. More than 90% of GMO corn and soybeans grown in the US are engineered to tolerate glyphosate, which has made the herbicide far more widely used since the mid-1990s. The World Health Organization's International Agency for Research on Cancer (IARC) classified glyphosate as "probably carcinogenic to humans" in 2015, a conclusion that a separate joint FAO/WHO expert panel disagreed with the following year, finding it "unlikely to pose a carcinogenic risk to humans" through dietary exposure. Regulators disagree with each other on this, which is exactly why it remains a live concern rather than a settled one.
- Cross-contamination. Pollen from GMO crops can drift into neighboring non-GMO or organic fields, making it hard for farmers to keep their crops genetically separate even when that's their goal.
- Corporate seed control. A small number of companies own patents on most commercial GMO seed varieties, which limits farmers' ability to save and replant seed year to year, a shift from more traditional farming practices.
- Labeling transparency. Many people simply want to know what's in their food and how it was produced, independent of any safety judgment either way.

How common are GMO ingredients?
More than you might expect. The Non-GMO Project estimates that over 70% of packaged products on US grocery shelves contain some GMO ingredient, largely because corn, soy, and canola derivatives (like corn syrup, soy lecithin, and canola oil) show up in so many processed foods, according to the organization's GMO Facts page. That's a big part of why even people who aren't worried about safety per se still look for the Non-GMO Project's butterfly seal, as a way to vote with their dollars on farming practices and transparency.
