"High risk" sounds alarming, but in Non-GMO Project terminology it has a specific, narrow meaning: a crop with a genetically engineered version that's already widespread in commercial agriculture. It's a statement about market prevalence, not a safety warning. Knowing this list is the fastest way to read an ingredient label with any real accuracy.
The Non-GMO Project's current high-risk list includes alfalfa, apple, canola, corn, cotton, eggplant, papaya, pineapple, potato, soy, sugar beet, and zucchini or yellow summer squash. These are crops where a GMO version already dominates or makes up a large share of commercial production.
What does "high risk" actually mean?
According to the Non-GMO Project's own risk status page, high risk is "the most impactful risk status," used when a genetically modified version of a crop is ubiquitous in the marketplace. Corn is the clearest example: about 93% of corn grown in the US is genetically engineered, so unless a corn product is specifically verified or organic, it's reasonable to assume it came from a GMO source.
This is different from the "monitored" list, which covers crops where GMO versions exist or are in development but aren't yet widely sold, like wheat, oats, and rice.

Why are these specific crops on the list?
Genetic engineering in US agriculture has mostly concentrated on a small number of commodity crops, largely because these were the first and most profitable targets for herbicide-tolerance and pest-resistance traits. Corn and soy dominate US row-crop farming, and both were early candidates for "Roundup Ready" glyphosate-tolerant traits. What ingredient names should you actually watch for?
Most high-risk crops don't show up on labels by their crop name. They show up as processed derivatives. Here's the practical translation:
- From corn: corn syrup, high fructose corn syrup, corn starch, cornmeal, dextrose, maltodextrin, xanthan gum (sometimes corn-derived)
- From soy: soybean oil, soy lecithin, soy protein isolate, textured vegetable protein, vegetable oil (if unspecified)
- From canola: canola oil, vegetable oil blends
- From sugar beet: "sugar" without a "cane sugar" qualifier
- From cotton: cottonseed oil
If a packaged product lists any of these without a Non-GMO Project or USDA Organic seal, it's reasonable to assume the ingredient came from a GMO source, simply based on how dominant GMO varieties are in each of these crops.
What isn't on the high-risk list?
This matters just as much. Wheat, rice, oats, most fruits (aside from limited Arctic apple and Innate potato varieties), leafy greens, and the vast majority of fresh vegetables have no widely commercialized GMO version in the US. If a product is made primarily from these ingredients, GMO status usually isn't a relevant concern, regardless of what marketing language appears on the package.
